Description
This is a recipe for vegan whipped cream, aka cashew creme. It works well anywhere whipped cream would. This recipe can be prepared in advance and saved in the fridge for a day or two. This recipe uses no soy and no dairy and is a fresh change to typical soy based desserts.
Ingredients
- 1 cup raw cashews, whole or pieces
- 1/2 cup water
- 1 tbsp maple syrup
- 1 tbsp vanilla
- 1 tbsp lemon juice
Steps
Soak the cashews in 3 cups of water for a few hours (4 works well). Drain and blend the cashews in a blender with the remaining ingredients.
Additional Tips
Use this vegan whipped cream on top of fruit, on cakes or in crepes. Or just it it plain with a spoon. Its really quite good.
