Description
This recipe for curry mushroom is a recent discovery. For the longest time I was under the impression that mushrooms are typically not used in curries. Im not sure why I thought that,.. perhaps it was something I heard about yogis avoiding fungus,.. whatever. You like mushroom? You like curry? Try this then.
Ingredients
- 1/2 lb white or brown mushrooms sliced thinly
- 2 large tomatoes, sliced
- 1 large onion, chopped
- 1/4 tsp turmeric
- Chili to taste
- Salt to taste
- Vegetable oil
Steps
Heat the oil. Fry the onions with the turmeric until soft.
Add the tomatoes and cook for about another 3 minutes, stirring well.
Finally add the mushrooms. Simmer the curry for about 15-20mins, until most of the liquid has evaporated.
Serve hot.
Additional Tips
Vegan mushroom curry is an interesting dish, especially if you like mushrooms. This mushroom curry is best served hot and eaten shortly after preparation. Typically, Im not a fan of left-over mushroom so I usually scarf the curried mushrooms down quite quickly.
