Description
Salsa goes well on just about anything. This is a classic southern sauce that is used a lot as a condiment to Mexican style food. Use it with nachos, tacos, burritos, fries, whatever.
Ingredients

- 2 cloves garlic
- 1/2 small onion chopped (optional)
- 1 cup onions, coarsely chopped
- 2 cups tomatoes, halved
- 1 small hot pepper, seeded
- 1 sweet red pepper, seeded and roughly chopped
- 1 green pepper, seeded and roughly chopped
- 1/2 tsp salt
- 1 bunch chopped fresh coriander
- 3 tbsp lime juice
- 1/2 tsp cayenne (optional; more if hot salsa is desired)
Steps
Place all ingredients in a food processor or blender. Process or blend for a few seconds. Texture should be chunky or smooth as desired. Add fresh coriander to the food processor for the last few seconds.
Additional Tips
I find it helpful to blend the garlic, peppers and onion first, then I toss in the tomato. Blending the 'flavorful' ingredients first helps to homogenize the salsa.
