Description
Little introduction is necessary for this vegetarian staple. If you dont know, Hummus is a spread made primarily of chick pea and tahini (sesame butter). It can be used as a dip for carrots or chips, as a spread for wraps and sandwiches or anywhere even vaguely appropriate.
Ingredients
- 3 cups cooked chickpeas *see below
- 3 medium sized cloves fresh garlic
- 1 tsp ground cumin
- 3/4 cup chickpea cooking liquid (or water)
- 3 tbsp lemon juice
- 1/4 cup tahini
Steps
Place all ingredients in a food processor or blender and blend until very smooth. Cool for 2 - 3 hours.
Additional Tips
Serve with pita bread, crackers, or vegetable sticks.
*One can use canned chick peas for this hummus recipe however the preferred method is to use dried chickpeas. To make three cups of cooked chickpeas do this:
- 3/4 cup chickpeas
- 4 cups cold water
Soak chickpeas overnight in cold water. Drain and rinse. Add 4 cups fresh water and boil for about 1 hour until soft. Drain cooked chickpeas and reserve cooking liquid.
